Vanilla Ice Cream Recipe
Ingredients:
• 2 Vanilla pods • 3 Egg yolks • 70 gm Sugar • 500 ml Double cream
How to make Vanilla Ice Cream:
Divide the vanilla pods into two parts lengthwise and scrape out the seeds.
Add the pods to the cream and bring it to a boil.
Add sugar and stir until it dissolves.
Whisk the egg yolks in a big bowl and now strain the cream onto them, keep stirring.
Now pour ice cream into another bowl through a fine sieve and whisk in the vanilla seeds.
Place the mixture into an ice cream maker or large freezer proof dish.
Freeze Vanilla Icecream till set for about 2 hours.

Pumpkin Ice Cream Recipe
Ingredients:
• 1 (8 oz) can Pumpkin Puree • 1 tsp Vanilla Extract • 2 cups Heavy Cream • ¾ cup Brown Sugar • 5 Egg Yolks • ½ tsp Cinnamon • ½ tsp Ginger • ¼ tsp Salt • 1 pinch Nutmeg • 1 tbsp Bourbon

How to make Pumpkin Ice Cream:
Combine together pumpkin puree and vanilla extract in a bowl. Whisk the blend well.
Cover the bowl and refrigerate for at least 3 hours.
Place a 2-quart saucepan on medium heat and mix 1½ cups of heavy cream with ½ cup of brown sugar.
Cook the mixture for about 5 minutes till bubbles start forming around the edges of the pan.
Combine egg yolks, cinnamon, ginger, salt, nutmeg, remaining ½ cup cream and remaining ¼ cup brown sugar in a large mixing bowl. Mix well till the mixture turns smooth.
Remove the cream mixture from heat and add ½ cup of the mixture to the egg mixture. Stir until smooth.
Pour the egg mixture back into the pan.
Cook on medium heat while stirring with a wooden spoon.
Simmer the custard till it turns thick enough to cover the back of the spoon, for about 4 to 6 minutes. Do not boil the mixture.
Strain the mixture through a fine-mesh sieve into a bowl.
Fill a large bowl with ice water.
Place the bowl of custard into the ice water and stir occasionally to cool the mixture.
Mix the pumpkin mixture into the custard.
Cover the bowl with plastic wrap and refrigerate for at least hours or up to 24 hours to chill it.
Add the bourbon in the last minute of churning the custard.
Pour the ice cream into a freezer-safe container.
Cover the container and freeze for at least 3 hours or up to 3 days till it is firm.

At the time of serving, keep the outer surface of the ice cream tray or cones in contact with hot water for just 1-3 seconds and remove it in a plate.

How to make Kesar Elaichi Ice-Cream:
Take a bowl and mix a cup of milk, milk powder and corn flour in it, to make a smooth paste.
Take 2 tbsp of milk in a cup and put saffron strands in it. Keep it aside.
In a pan, add sugar, saffron and cardamom powder, along with a cup of milk and bring it to boil.
Now, cook it on simmer for 5 to 7 minutes and add the milk mixture prepared earlier. Stir it occasionally.
Cook it till the mixture starts coating the back of the spoon.
Remove from flame and allow it cool completely.
Add cream to the prepared mixture and mix well.
Pour this mixture in a shallow container, cover and freeze it, till it gets set.
Bring this mixture out of the freezer, divide into two batches and churn it using a blender, until it gets smooth.
Again, transfer the ice cream mixture in the shallow container and freeze till it is firm.
Scoop it out in ice cream bowls and serve chilled.

Blend on the mix setting for around 30 seconds then blend on the smooth setting for around 15 seconds or until nice and smooth. Note: While the machine is running, move the stir stick around counter-clockwise to aid mixing. Serve immediately

1 cup of tinned pineapples drained

Method-

C) Vitamin C Super Smoothie Recipe
(serves 2)
Ingredients:
1 large seedless oranges
2 Royal Gala apples
100gms low-fat peach yoghurt
1 tablespoon of plain cinnamon powder
Method-
To make this healthy smoothie recipe peel the orange leaving the white skin then slice the apples (leave the peel on but remove core). Put all ingredients into your blender and put the dash of cinnamon on top. Blend until smooth.

B) Cool Melon Smoothie Recipe
(serves 2)
Ingredients:
2 medium sized cups seedless watermelon
1/2 cup of natural yoghurt
1 tablespoon of sugar (optional)
1/2 teaspoon of ground ginger
1/8 teaspoon of almond extract (optional)
1 small cup of ice
Method-
Combine all ingredients in blender, blend for approx 40 seconds, pour into two glass and enjoy!


C) Cucumber and Tomato Blush Smoothie Recipe
(serves 2)
Ingredients:
1/2 a small cucumber
1/2 small cup of tomato juice
1 teaspoon of Worcestershire sauce
2 drops of Tabasco sauce
4 ice cubes
Method-
Roughly chop the cucumber then add it to your blender with the remaining ingredients. Blend until all ice is crushed.


D) Blushing Surprise Smoothie Recipe
(serves 2-3)
Ingredients:
1/2 medium cup of chopped cucumber
1/2 medium cup of chopped red bell pepper
3 tablespoons lemon juice
2 teaspoons Worcestershire sauce
2 tablespoons chopped scallions
pinch of salt1
1/4 teaspoon fresh ground pepper
1/4 teaspoon hot pepper sauce (optional)
Method-
Place all of the ingredients in the blender, blend for a total of 3 minutes (in 30 seconds blasts). Pour into a jug and chill for around 30 mins. When ready to serve pour into glass and enjoy

Method-

B) Strawberry Surprise Smoothie Recipe-
(serves 1)
Ingredients:
7 large strawberries
1 banana
1/2 - 1 mango
1 cup of apple juice
Method-
Chop up the strawberries and banana. If you have a juicer you can juice the mango, but if you don't- use 1/2 of the mango and blend together with the strawberries & banana (for approx 30 seconds). Add the apple juice and blend together again for 10 seconds. Serve.

Method-
This refreshing smoothie is perfect for breakfast. Place the chopped apples and bananas into a blender. Blend for 20 seconds. Add the milk and blend for another minute or so then serve. If it is not sweet enough try adding half a tablespoon of sugar or so then stir well or blend for 10 seconds! Serve the smoothie at once and enjoy.

8ogm low fat vanilla yogurt
1 cup of non-fat buttermilk
2 pieces of crystallized ginger (approx. 1 ounce)
2 ripe mango’s, peeled and chopped into small pieces½ cup of crushed ice
Method-
In the blender purée the fruit and ginger, scraping down the sides as necessary. Add the buttermilk, yogurt and ice and purée until smooth and frothy. Add crushed ice. Serve.


B) Mango Lassi Smoothie Recipe
(serves 4)
Ingredients:
2 Mangos
2 tablespoons of Greek yogurt
1/4 pint of milk
1 cup of ice
Method-

C) Triple Mango Smoothie Recipe
(serves 2)
Ingredients:
2 medium sized cups of Brazil gourmet mango nectar
1 pint of mango sorbet
2 fresh, ripe mangos
Garnish: sprig of mint / slices of lime

Remove the grapes from the stem. Juice the apple and ginger together, then juice the rest of the fruit. Pour the juice in a large glass and fill to the top with sparkling water and serve with ice.

Ingredients -Banana 1 ripe
Milk 1 1/2 cup
Lemon Juice 1 tbsp
Honey 2 1/2 tbsp
Raisins 2 tbsp
Cinnamon 1/4 tbsp ( ground )
Directions -1. This drink should be made just before serving. 2. Mix all contents in a blender and blend till it turns into a fine paste. 3. Serve immediately with a sprinkle of cinnamon powder on top.

Ingredients: Dry Ginger 30 gms
Sugar 4 tsp
Coriander seeds 10 gms
Directions: # Heat about 4 glasses of water , then add the dry ginger , coriander seeds , sugar . # Let the water boil for about 5 minutes , then strain the water.

3. Fruit punch
Ingredients: Sugar 4 cups
Pineapple juice 1 cup
Oranges, peeled& flaked 3 nos.
Lemon juice 3 nos.
Cherries 1 tin Pineapple slices, crushed 1 tin
Directions: # Boil sugar in 2 cups water for 10 minutes. # Cool and blend all the remaining ingredients well. # Store in bottles and serve with crushed ice

4. Kesari Pista Milk shake
Ingredients: Pista( soak them in water for about 1 hour) 100 gms
Almond(soak them in water for 2 hours)50 gm
Saffron a pinch
Sugar 50 gms
Milk 3 cups
Directions: # Take a pan and heat the milk , let the 3 cups simmer in very low heat , let it simmer until the milk becomes 1 1/2 cup. # Grind the almonds , along with the pista , and the saffron until they form a smooth paste # Add the ground paste to the milk and then stir them well. # Let the milk come to a boil for about twice. # And remove them from the stove, and when the milk comes to room temprature. # Place them in the refrigrator. Serve them cold.

Ingredients: Skimmed Milk 1 Cup
Unsweetened Mango Juice 1 Cup
Orange Juice 1/2 Cup
Honey 1 tbsp

Ingredients: Tomato pieces 4 cups

Directions: # Pulp tomato pieces with sugar in a blender for 30 seconds. # Filter through a sieve and wash the retained pulp by pouring cold water over the sieve. # Do not return the pulp to mixer. Ingredients: Blanched almonds 1/2 cup
Milk 2 cups
Cardamom powder or vanilla 1/2 tsp
honey or sugar to taste
Directions: # Add almonds and water in a blender or food processor fitted with the metal blade and process for 2-3 minutes or until the nuts are reduced to a fine puree. Add 2 cups of milk and further blend on low speed for about 15 seconds. Heat the milk blend to a boil. # Pour the mixture through a strainer over a pan.
