Ice cream recipes first appeared in 18th-century England and America. The recipe for ice cream was published in Mrs. Mary Eales's Receiptsin London in 1718.

To ice cream.
Take Tin Ice-Pots, fill them with any Sort of Cream you like, either plain or sweeten’d, or Fruit in it; shut your Pots very close; to six Pots you must allow eighteen or twenty Pound of Ice, breaking the Ice very small; there will be some great Pieces, which lay at the Bottom and Top: You must have a Pail, and lay some Straw at the Bottom; then lay in your Ice, and put in amongst it a Pound of Bay-Salt; set in your Pots of Cream, and 93 lay Ice and Salt between every Pot, that they may not touch; but the Ice must lie round them on every Side; lay a good deal of Ice on the Top, cover the Pail with Straw, set it in a Cellar where no Sun or Light comes, it will be froze in four Hours, but it may stand longer; then take it out just as you use it; hold it in your Hand and it will slip out. When you would freeze any Sort of Fruit, either Cherries, Rasberries, Currants, or Strawberries, fill your Tin-Pots with the Fruit, but as hollow as you can; put to them Lemmonade, made with Spring-Water and Lemmon-Juice sweeten’d; put enough in the Pots to make the Fruit hang together, and put them in Ice as you do Cream.

Vanilla Ice Cream Recipe
• 2 Vanilla pods • 3 Egg yolks • 70 gm Sugar • 500 ml Double cream
How to make Vanilla Ice Cream:
Divide the vanilla pods into two parts lengthwise and scrape out the seeds.
Add the pods to the cream and bring it to a boil.
Add sugar and stir until it dissolves.
Whisk the egg yolks in a big bowl and now strain the cream onto them, keep stirring.
Now pour ice cream into another bowl through a fine sieve and whisk in the vanilla seeds.
Place the mixture into an ice cream maker or large freezer proof dish.
Freeze Vanilla Icecream till set for about 2 hours.

Pumpkin Ice Cream Recipe
• 1 (8 oz) can Pumpkin Puree • 1 tsp Vanilla Extract • 2 cups Heavy Cream • ¾ cup Brown Sugar • 5 Egg Yolks • ½ tsp Cinnamon • ½ tsp Ginger • ¼ tsp Salt • 1 pinch Nutmeg • 1 tbsp Bourbon

How to make Pumpkin Ice Cream:
Combine together pumpkin puree and vanilla extract in a bowl. Whisk the blend well.
Cover the bowl and refrigerate for at least 3 hours.
Place a 2-quart saucepan on medium heat and mix 1½ cups of heavy cream with ½ cup of brown sugar.
Cook the mixture for about 5 minutes till bubbles start forming around the edges of the pan.
Combine egg yolks, cinnamon, ginger, salt, nutmeg, remaining ½ cup cream and remaining ¼ cup brown sugar in a large mixing bowl. Mix well till the mixture turns smooth.
Remove the cream mixture from heat and add ½ cup of the mixture to the egg mixture. Stir until smooth.
Pour the egg mixture back into the pan.
Cook on medium heat while stirring with a wooden spoon.
Simmer the custard till it turns thick enough to cover the back of the spoon, for about 4 to 6 minutes. Do not boil the mixture.
Strain the mixture through a fine-mesh sieve into a bowl.
Fill a large bowl with ice water.
Place the bowl of custard into the ice water and stir occasionally to cool the mixture.
Mix the pumpkin mixture into the custard.
Cover the bowl with plastic wrap and refrigerate for at least hours or up to 24 hours to chill it.
Add the bourbon in the last minute of churning the custard.
Pour the ice cream into a freezer-safe container.
Cover the container and freeze for at least 3 hours or up to 3 days till it is firm.

Now add vanilla essence. Also mix few drops of food coloring.
Keep it in refrigerator in a closed container.
Remove and beat it with an eggbeater when half set.
Keep it back in refrigerator.

At the time of serving, keep the outer surface of the ice cream tray or cones in contact with hot water for just 1-3 seconds and remove it in a plate.
Pista Kulfi is ready to serve.

How to make Kesar Elaichi Ice-Cream:
Take a bowl and mix a cup of milk, milk powder and corn flour in it, to make a smooth paste.
Take 2 tbsp of milk in a cup and put saffron strands in it. Keep it aside.
In a pan, add sugar, saffron and cardamom powder, along with a cup of milk and bring it to boil.
Now, cook it on simmer for 5 to 7 minutes and add the milk mixture prepared earlier. Stir it occasionally.
Cook it till the mixture starts coating the back of the spoon.
Remove from flame and allow it cool completely.
Add cream to the prepared mixture and mix well.
Pour this mixture in a shallow container, cover and freeze it, till it gets set.
Bring this mixture out of the freezer, divide into two batches and churn it using a blender, until it gets smooth.
Again, transfer the ice cream mixture in the shallow container and freeze till it is firm.
Scoop it out in ice cream bowls and serve chilled.
